Chef Andre’s “Pecan Coconut Chocolate Chip Cookies” Recipe

YEILD: 24 / PREP TIME: 15 mins / TOTAL TIME: 30 mins

 

INGREDIENTS:

1 cup butter, (2 sticks)

1 cup granulated sugar

1 cup brown sugar

2 eggs

1 tsp. vanilla

2 ½ cups oatmeal, chopped in a blender

1 1/2 cups all-purpose flour

1/2 cup almond flour

½ tsp. salt

1 tsp. baking powder

1 tsp. baking soda

1-8oz. bag chocolate chips

2 1/2 cups unsalted pecan nuts

1 cup coconut flakes

 

INSTRUCTIONS:

Preheat oven to 350°

In a large bowl, cream together butter, sugar, and brown sugar.

Add eggs and vanilla.

In a separate bowl, mix the blended oatmeal with flour, add salt, baking powder, and baking soda. Mix to combine, then add to wet ingredients, and mix until just combined.

Add chocolate chips, pecan nuts, and coconut flakes stir to mix well.

Bake on an ungreased cookie sheet at 350° for 12-15 minutes.
